Cooking Blue Bison Steaks & Burgers
Bison meat is an easy replacement for many of your favorite Beef recipes. It is sometimes very difficult to differentiate Beef and Bison meat products. Although Bison has a richer, fuller flavor, it can often be mistaken for Beef. When cooking Bison meat, you must remember that  there is less fat content, therefore it will cook faster. Because fat is in insulator, heat must first penetrate this insulation before the cooking process can begin. Marbling, which is fat within the muscle, slows down the cooking process, like with Beef. Because Bison meat lacks marbling, the meat will cook more rapidly, so extra care must be taken to avoid drying it out through overcooking.
Bison steaks and burgers are best cooked rare or medium with a pink center.

Oven Broiling
Move the oven rack a notch lower than you normally would when cooking beef. Make sure to check on the meats progress a few minutes early because Bison meat tends to cook faster.

Grilling
Bison is best cooked over medium/hot coals at about six inches above the heat. Be sure to watch your meat so that it doesn’t overcook.

Roasting
Keep your oven temperature at a low heat to cook the meat more slowly. The slower your meat is cooked, the less it will shrink, becoming more tender and juicy. Using a meat thermometer will help reassure the meat is cooked to your liking.

Cooking Blue Bison Express Entrées

Bison Lasagna
3lb, family sized, ready to cook lasagna with layers of pasta and bison ragout in a zesty Italian style sauce.  Made with sun-dried tomato, basil, sweet peppers, parmesan, ricotta and mozzarella cheese. Remove from packaging and bake in an oven safe dish at 425 degrees for 45 minutes.

Bison Italian Sausage Pizza
20oz ready to cook sausage pizza with layers of pizza sauce, sausage, mozzarella and parmigiano cheese on a whole wheat crust. Remove from packaging and bake on a cookie sheet at 425 degrees for 25-30 minutes or until cheese is melted.

Bison Meatloaf
Maintain frozen until ready to use. Defrost thoroughly under refrigeration. Reshape unthawed meat into loaf and place in baking dish. Place in
preheated 350° oven and bake until internal temperature reaches 140°. As oven and oven temperatures vary widely, we suggest using a meat
thermometer. If the meatloaf begins to brown too quickly, tent it with aluminum foil. Remove from oven and allow to set for 5-10 minutes. Slice
and serve. Refrigerate leftovers immediately.

Bison Roast in Sauce
Maintain product frozen until ready to use. Defrost under refrigeration. Pour BBQ Bison into a sauce pan or a microwavable dish and heat until
thoroughly warm. Ladle or scoop generously onto a sliced roll or hoagie. Add thinly sliced raw sweet onion on top of bison if desired. Serve
while warm. Return any unused portion to refrigerator immediately.
