  BLUE BISON ENCHILADAS

Ingredients
Order Bison Meat
ENCHILADAS:
1 lb ground blue bison meat
1 medium onion, chopped (1/2 cup)
1 T cumin
1/4 cup chili powder
1/4 cup water
1/2 t salt
No stick cooking spray
20 corn tortillas

ENCHILADA GRAVY:
1 cup shredded cheese (can be a mix of white & yellow)
1 T cumin
1 t flour
2 cloves garlic, finely chopped
1/3 cup chili powder
1 cup water
1 t salt
1/4 cup canola oil

Instructions
FOR THE ENCHILADAS:
Cook beef and chopped onion in 10-inch skillet over medium heat 8 to 10 minutes, stirring occasionally, until brown & onion is soft.Stir in water, salt, cumin & chili powder. Cook for 2-5 minutes over medium heat.Remove from heat and keep warm.
Lightly spray each side of corn tortilla with cooking spray. Fan tortillas on a plate and cook in microwave 2-5 minutes or until soft and pliable.Cover them with a warm damp towel while making sauce.

FOR THE ENCHILADA GRAVY
Heat canola oil, flour, cumin, chili powder, garlic and salt. Cook on medium high for 2-5 minutes, stirring constantly. Stir in water reduce heat to low. Simmer uncovered for 3 minutes. Cover & remove from heat.
Dip a tortilla into sauce, removing quickly. Spoon about 1/4 cup beef mixture onto tortilla tightly roll tortilla around filling. Place in ungreased  baking dish seamside down. Keep repeating- lining up in a row. Top with cheese and microwave or bake only until cheese melts.
Just before serving pour remaining sauce over top.

Makes 20 enchiladas. Serves 5-6
