Ingredients
Order Bison Meat
2 pounds ground buffalo meat
1 Tablespoon sea salt
2 teaspoons freshly ground black pepper
4 ounces panko bread crumbs
1 – 2 ounces cornstarch
2 -3 ounces lime juice
16 ounces Frank’s Red Hot buffalo sauce mixed with ½ cup sugar
6 cracked-wheat buns
6 – 8 ounces crumbled blue cheese mixed with just enough blue cheese dressing to bind crumbles
Instructions
Mix meat, salt, pepper, and bread crumbs in a cold bowl, roll into 5- or 6- ounce balls, and form patties. Stir cornstarch and lime juice into a slurry, add 4 ounces of it to heated buffalo sauce in saucepan, and cook for several minutes over medium heat. Set aside. Grill patties over high heat for 2 minutes per side for medium. Buffalo is 92% lean, so it’s actually better rare. Place on buns, and top with sauce and blue cheese dressing along with any other toppings you prefer on your burger. Makes 5 to 6 servings.
