Blue Bison Stuffed Peppers

Ingredients

Order Bison Meat
1 Lb. Blue Bison Buffalo Meat
4 Large Bell Peppers
1.5 tbsp Extra Virgin Olive oil
2 Cloves Garlic
1/2 Medium Red Onion
1 cup tomato sauce
1 tbsp crushed red pepper flakes
2 tsp. Sea Salt
2 tsp. Ground Black Pepper
1 tsp. Fresh basil
1 cup Italian bread crumbs
1 cup Parmesan reggiano

Instructions

1.)Cut tops of Bell Peppers and remove contents, drizzle olive oil lightly over and inside peppers.
2.)Bake Peppers in oven at 375F for 15 min or till lightly browned and softened.
3.) Add minced garlic and onion to med temp Extra Virgin Olive oil till lightly browned and caramelized.
4.) Add 1lb Buffalo Meat, add salt, pepper and red pepper flakes cook till browned then add Fresh Basil and tomato sauce then remove from heat.
5.) Remove Peppers from oven and fill with Buffalo meat using heavy spoon.
6.)Lightly cover tops of peppers and meat with Italian bread crumbs.
7.)Sprinkle grated Parmesan reggiano on top of bread crumbs.
8.)Place Peppers back into oven for an additional 15 min or until Parmesan is lightly browned and crisped.
9.)Remove Peppers and let rest for 5 min, then serve.
