  Bistro Bison Slider Burgers w/ Sweet Caramelized Onions

Ingredients
Order Bison Meat
1 lb ground bison meat
Montreal steak seasoning
vegetable oil
12 mini potato rolls or other soft dinner roll

Bistro Sauce
1/4 c dijon mustard
1/4 c honey
1/2 c mayo
1 teaspoon dill
1 tablespoon prepared horseradish
salt and pepper to taste

Caramelized onions
2 large sweet onions (vidalia or walla walla if available) sliced along rib lines about 1/4" thick
1 tablespoon vegetable oil
1 tablespoon butter
salt and pepper to taste
Instructions
For caramelized onions, in saute pan over low to med low heat saute onions in veg oil stirring occasionally until golden brown and soft (not burned).  This takes from 30 45 minutes.  Just before removing from stove, add butter and season with salt and pepper.  Remove from heat and set aside.

Prepare Bistro sauce by combining all ingredients in bowl and whisk until well incorporated.  Set aside in refrigerator until ready to use.

Preheat grill on high heat until very hot.  Then turn down to medium heat immediately prior to grilling burgers.

For bison burgers, divide meat into 12 equally sized patties and coat each burger lightly with veg oil and montreal seasoning. Grill over medium heat for approximately 1 to 2 minutes per side or to desired donenness.

When burgers reach desired doneness remove to plate and begin assembly

Place burger on bottom half of bun, then top with a 1/2 tablespoon bistro sauce and 1 tablespoon caramelized onions and top with top half of bun.  Insert 4" frilled toothpick to hold together.
Eat, enjoy and receive compliments from guests!
