Ingredients
Order Bison Meat
1 lb. ground bison
1/4 cup very finely chopped onion
1 tablespoon Worcestershire sauce
1 teaspoon chili powder
1 tablespoon chopped pickled jalapeno pepper
salt and pepper to taste
4 oz. pepper jack cheese, sliced
4 slices tomato
4 thin slices red onion
4 large flour tortillas
olive oil
Instructions
Lightly mix ground bison with onion, Worcestershire sauce, chili powder, jalapeno and salt and pepper to taste. Form into four patties, about 2 inches wide and 4-5 inches long.
In large skillet, heat 2 tablespoons olive oil. Saute bison burgers in hot oil until browned on both sides and no longer pink in middle.
Place burgers on tortillas positioning on one end of the tortilla and leaving the other end free to fold over, cover with cheese, tomato slices and onion. Fold tortilla over the burgers.
Brush the skillet with some additional oil (if there is still some oil left in the skillet from frying the burgers, this step may no be necessary) and toast the quesadillas on both sides, just until cheese is melted and tortillas have lightly browned.
Serve at once.
